CREAMY CUCUMBER SALAD
2 CUPS CUCUMBER - CUT LENGTHWISE, THEN SLICED
1 CUP TOMATOES - HALVED & SLICED
1 CUP ONIONS - QUARTERED & SLICED
DRESSING:
1/2 CUP SOUR CREAM, YOGURT, OR NAYONAISE (soy based)
1 TBS. SUGAR OR HONEY
1 tsp. RED WINE OR APPLE CIDER VINEGAR
1 TBS. FRESH BASIL, DILL, PARSLEY, OR SMALLAGE (your choice) - MINCED
1 CLOVE GARLIC - MINCED
SALT & PEPPER TO TASTE

IN A LARGE MIXING BOWL, COMBINE ALL VEGETABLES AND TOSS BEFORE DRESSING.
IN A SMALL MIXING BOWL, COMBINE ALL DRESSING INGREDIENTS AND
WHISK UNTIL SMOOTH. POUR DRESSING OVER VEGETABLES, MIX WELL,
THEN COVER AND REFRIGERATE FOR ONE HOUR. TASTE, AND ADJUST SEASONINGS
IF NEEDED. SERVE WITH A SLOTTED SPOON.
NOTE: SLICES OF MULTI-COLORED BELL PEPPERS AND/OR SPROUTS
MAKE A WONDERFUL ADDITION TO THIS SALAD. TO ENHANCE THE FLAVOR, ADD LIBERAL
AMOUNTS OF FRESH GROUND BLACK PEPPER.
