BRUCHETTA


1 1/2 CUPS FRESH RIPE JULIETTE OR ROMA TOMATOES - FINELY CHOPPED
10 LARGE LEAVES BASIL - MINCED
4 CLOVES GARLIC - MINCED
2 TBS. OLIVE OIL
1 tsp. SALT

  COMBINE CHOPPED TOMATOES AND SALT IN MEDIUM SIZED BOWL. MINCE THE
BASIL AND GARLIC TOGETHER THEN COMBINE ALL THE INGREDIENTS. 
REFRIGERATE APPROXIMATELY 15 MINUTES. ADD MORE BASIL, GARLIC, OR SALT TO TASTE.
SERVE ON TOASTED BREAD WEDGES WITH YOUR FAVORITE WINE.

NOTE: TRY BRUCHETTA HOT! JUST STRAIN ABOUT ONE HALF OF THE JUICE FROM THE
DISH, SPREAD ON TOAST WEDGES, THEN TOP WITH MOZZARELLA CHEESE.
BROIL UNTIL BUBBLY, ENJOY!
